These came out so good!  I am happy to tell you that they are grain and gluten free.  If you have a nut allergy, you can try making them with sunflower seeds.  This makes the perfect snack because it only takes minutes to make them and there is no sugar added!

Almond Joy Engery Bites
  • 1 cup almonds
  • 1 cup shredded unsweetened coconut
  • 5-6 medjool dates
  • ¼-1/2 tsp almond extract
  • 1 TBS coconut oil melted
  • 2 TBS water
  • ¼ cup chocolate chips (I used carob chips)
  1. In a food processor, mix the almonds and coconut until they are fine. Then add the dates, coconut oil and water and continue to pulse until you see a dough start to form. Roll into balls and place in the fridge to firm up. I got about 12 servings out of my batch.
